If you breathe in a gentle nose of Tobalá, it is first and foremost reminiscent of spicy bacon and woody chimney smoke aromas. With the first sip, the smoky, spicy aroma turns into an earthy, peppery one - mixed with a fruity orange note, which remains as a long, robust finish.

Agave

The Tobalá agave ( agave potatorum ) used in Noble Coyote Mezcal comes from the San Luis Amatlán region of Oaxaca. The Noble Coyote Tobalá agave is one of the largest varieties of this relatively small species of agave. Unlike the classic tobalá, whose agave heart ( piñas ) typically measures 0.3 to 0.6 metres, it is common for Noble Coyote tobalá - both cultivated and wild - to measure from 1.0 to 1.5 metres. Tobalá grows - comparable to truffles - in the shade provided by trees. She is considered the "King of the Agaves". In Nahuatl, the Aztec language, her name means butterfly. It grows on limestone and sandy rocks in forests at an altitude between 1200 and 2300 meters. Because of its very aesthetic, appealing appearance, the Tobalá agave is also used as an ornament in Oaxaca.

 

Assessment of the Meczaleros

Tobalá is the only wild species that has been "cultivated" - although not 100%. 15 years ago, all Tobalá agaves used for mezcal were 100% wild harvested. Today, Noble Coyote have achieved what seemed impossible to many: to breed the Tobalá Agave, which otherwise grows wild. This will ensure the stocks needed to make fine mezcals and protect this rare species and its continued existence in the wild.
