Mezcal Noble Coyote - Artesanal from Oaxaca

Mezcal vs. Tequila – the most important difference

Not from cacti. But from agaves.

Many people believe that mezcal or tequila are made from cacti – a misconception. Both come from agave plants, a fascinating genus of plants that are even botanically related to asparagus. Surprising, isn't it?

Mezcal: Deep roots, smoky character

Mezcal is more than a drink – it's part of Mexican identity. The agave plants mature for years, concentrating their power in the piña , the heart of the plant. Slowly roasted in earth ovens, it develops its unmistakable smoky aroma – a true craft passed down through generations.

And the worm? The Gusano de Maguey larva was formerly used to test alcohol content. Today it is more of a symbolic relic – sometimes a tradition, sometimes a marketing gimmick.

Tequila: Clear, modern, versatile

Tequila relies on the blue Weber agave and modern cooking methods. The result: a mild, fresh taste – ideal for cocktails or a gentle introduction to the world of agave.

Authentic Mezcal from Oaxaca – artisanal, sustainable and full of soul.

Noble Coyote is produced in the heart of Oaxaca, a region where time, fire, smoke, and ancient wisdom set the rhythm. Each mezcal is crafted according to NOM 70 artisanal methods, following techniques passed down through generations: earth ovens, tahona, wild fermentation, and small-batch distillation.

Noble Coyote works with the land, not over it. The agave plants come from sustainable seed cultivation, grow at their own pace for many years, and are only harvested when they have reached their full potential. This results in a mezcal that is deeply rooted in the soil and carries the essence of its terroir.

The meaning of "Noble Coyote"

“Noble” derives from the Greek “Agaué” – the origin of the word “Agave” and meaning “noble”. “Coyote” comes from the Nahuatl “coyōtl” and means “place of the heart”.

Together they represent what makes this mezcal unique: connection to the earth, soul, knowledge and respect for nature.

Mezcal with personality

Each Noble Coyote Mezcal possesses its own unique character: from fruity and floral (Espadín) to complex and mineral (Tobalá), and even rare, wild varieties like Jabalí or Tobalá Silvestre. These agave plants are processed with great precision and dedication by experienced Maestros Mezcaleros.

Excellent craftsmanship

Noble Coyote has received numerous international awards, including at The Spirits Business, ISWC, and other global tastings. Each bottle bears the name of the Maestro Mezcalero, the village, the agave variety, and the lot number – a testament to transparency and genuine craftsmanship.

How do you drink mezcal properly?

Traditionally, mezcal is enjoyed neat, at room temperature, and from small copitas or jícaras . Orange with sal de gusano enhances the aromas. Those who love mezcal in cocktails will find inspiration in drinks like the Mezcal Margarita, Naked & Famous , or Oaxaca Old Fashioned.

Noble Coyote is more than just a drink – it is a tribute to the earth, to time, and to the spirit of every agave.
