Authentic Mezcal from Oaxaca – artisanal, sustainable and full of soul.

Noble Coyote is produced in the heart of Oaxaca, a region where time, fire, smoke, and ancient wisdom set the rhythm. Each mezcal is crafted according to NOM 70 artisanal methods, following techniques passed down through generations: earth ovens, tahona, wild fermentation, and small-batch distillation.

Noble Coyote works with the land, not over it. The agave plants come from sustainable seed cultivation, grow at their own pace for many years, and are only harvested when they have reached their full potential. This results in a mezcal that is deeply rooted in the soil and carries the essence of its terroir.

The meaning of "Noble Coyote"

“Noble” derives from the Greek “Agaué” – the origin of the word “Agave” and meaning “noble”. “Coyote” comes from the Nahuatl “coyōtl” and means “place of the heart”.

Together they represent what makes this mezcal unique: connection to the earth, soul, knowledge and respect for nature.

Mezcal with personality

Each Noble Coyote Mezcal possesses its own unique character: from fruity and floral (Espadín) to complex and mineral (Tobalá), and even rare, wild varieties like Jabalí or Tobalá Silvestre. These agave plants are processed with great precision and dedication by experienced Maestros Mezcaleros.

Excellent craftsmanship

Noble Coyote has received numerous international awards, including at The Spirits Business, ISWC, and other global tastings. Each bottle bears the name of the Maestro Mezcalero, the village, the agave variety, and the lot number – a testament to transparency and genuine craftsmanship.

How do you drink mezcal properly?

Traditionally, mezcal is enjoyed neat, at room temperature, and from small copitas or jícaras . Orange with sal de gusano enhances the aromas. Those who love mezcal in cocktails will find inspiration in drinks like the Mezcal Margarita, Naked & Famous , or Oaxaca Old Fashioned.

Noble Coyote is more than just a drink – it is a tribute to the earth, to time, and to the spirit of every agave.

Mezcal vs. Tequila – the most important difference

Not from Cacti. But from Agaves.

Mezcal and Tequila both originate from agaves – not from cacti. Botanically, the agave even belongs to the asparagus family. Surprising, but true.

Mezcal: Deep Roots, Smoky Character

Mezcal is deeply rooted in Mexican culture.
Unlike Tequila, over 30 different agave species can be used – each with its own character.

The agaves often mature for many years before their core, the piña, is traditionally roasted in earthen ovens. This creates the typical, slightly smoky aroma profile. Mezcal is complex, handcrafted, and characterized by regional diversity.

The well-known "worm" (Gusano de Maguey) is now mostly a symbol or marketing – not a quality feature.

Tequila: Clear, Modern, Versatile

Tequila is exclusively made from the blue Weber agave.
Modern cooking and distillation methods ensure a clear, fresh taste profile – ideal for cocktails or an introduction to the world of agave.

Häufige Fragen zu Mezcal

Was ist Mezcal?
