Noble Coyote is produced in the heart of Oaxaca, a region where time, fire, smoke, and ancient wisdom set the rhythm. Each mezcal is crafted according to NOM 70 artisanal methods, following techniques passed down through generations: earth ovens, tahona, wild fermentation, and small-batch distillation.
Noble Coyote works with the land, not over it. The agave plants come from sustainable seed cultivation, grow at their own pace for many years, and are only harvested when they have reached their full potential. This results in a mezcal that is deeply rooted in the soil and carries the essence of its terroir.
The meaning of "Noble Coyote"
“Noble” derives from the Greek “Agaué” – the origin of the word “Agave” and meaning “noble”. “Coyote” comes from the Nahuatl “coyōtl” and means “place of the heart”.
Together they represent what makes this mezcal unique: connection to the earth, soul, knowledge and respect for nature.

Each Noble Coyote Mezcal possesses its own unique character: from fruity and floral (Espadín) to complex and mineral (Tobalá), and even rare, wild varieties like Jabalí or Tobalá Silvestre. These agave plants are processed with great precision and dedication by experienced Maestros Mezcaleros.
