Back to the roots: mezcal as the original form of tequila
The Mexican spirit mezcal is made from fermented, cooked hearts of agave. The strong drink is quasi the prototype of the tequila. Why? Different types of Agave can be used to make mezcal. In contrast to that legally only one, Agave Tequilana Weber Azul, can be used to make tequila. Anyone who sees this as a blemish testifies ignorance: Excellent mezcal is a quality product that does not have to hide behind a single malt. And at this point let us clear up with another prejudice. The worm in some mezcal is a mere marketing gag and not a quality feature - rather the opposite. Choose a mezcal without a worm!
Mezcal: the traditional hipster with Aztec soul
The history of mezcal goes back to the Aztecs before the Spanish colonization in the 15th century has started. Over the centuries, agave spirits are an essential part of every social event in Mexico. Therefore, it may suprises you that only since the 1990s the mezcal has slowly received the worldwide recognition. And it deserves it. This is due to the fact that strict official regulations on the mezcal have been passed since the 1990s. In addition to that more and more excellent distilleries popped up, who focus on the rough, traditional drink. Today, they bring out a first-class mezcal, which has conquered the heart of gourmets and hipsters around the globe. Fall in love with this ancient drink of Mexico!
How to Drink mezcal the Mexican Way
The Mexicans drink their mezcal pure, because they appreciate its smoky taste. If you like, you can complement the culinary delight with fruits or spices that harmonize with the smoke aroma. The Best Mezcal: Types & Qualities
Worldwide liquor sales amount to 35 billion liters. This accounts for 820 million liters of gin, while the mezcal is only represented with six million liters. What a treasure! The quality of the drink is supported by the Consejo Regulador del mezcal, which issued new regulations for three hierarchical mezcal categories in 2016/17:
• Mezcal Industrial: Manufactured by using modern machining techniques (13 % exported)
• Mezcal Artesanal: mostly handmade (86 % exported)
• Mezcal Ancestral: completely original and without electricity (1 % exported)
In addition, there are official types of mezcal that are based on the maturity level:
• Joven / Blanco: white mezcal, "rested" in oak for less than two months
• Reposado: "rested" in oak for at least 60 days
• Añejo: "rested" in oak at least for one year
• Abocado: clear mezcal with colorings or flavors
It is noteworthy that the Joven accounts for the majority (81%) of the goods produced. It is followed by 7% of reposado and 2% of añejo. Why? The answer you find in botany. The mezcal is so complex that it is already ready to drink after around seven years of maturity in nature. Storage is not necessary to have a perfect, full taste. Stick to Joven and try the holistic aroma of one of the best mezcal!
Mezcal: an economic engine of a region
Most of mezcal comes from the state of Oaxaca, where some 35,000 families live directly or indirectly from it. It has become an important economic factor, although harvesting the agaves and making the finished drink requires a lot of hard physical labor. The income feeds whole villages, especially if it comes from productions that pay fair wages. Many of the mezcaleros are not greedy and produce only a few hundred liters of mezcal per month. They are aware of the risks that an overproduction would bring for the environment and ultimately for humans. Show your awareness and grab a mezcal from sustainable production!
